We are proud to announce the next initiative in our sustainability roadmap! The Three Eagles is now officially recognised as a Carbon Free Dining Certified Restaurant.
Carbon Free Dining is a United Nations environment backed initiative that offsets the carbon associated with your meals and helps those less fortunate in the developing world by planting a fruit tree. The initiative is a fantastic way to help counterbalance the carbon associated with preparing your meals and, help some of the planet’s most impoverished communities, simply by an optional 99p added to your bill, so that you can dine guilt-free!
As members of the scheme, we’re demonstrating our commitment to the environment and helping to change the lives of communities across the developing world. We’ve already planted 100 trees through the initiative and we want you to help us plant more. By paying a small donation on your bill, we guarantee to plant a fruit tree in the developing world on your behalf.
Not only will your tree counterbalance the carbon footprint of your meal, but it will provide empowerment and opportunity for some of the developing world’s poorest communities and ultimately, help bring an end to poverty.
How does your contribution help?

]]>Coming soon – a brand-new dining concept from the team behind the Three Eagles to launch in the Wrexham area this autumn
Following recent news that our parent company and hospitality and leisure operator One Hundred Knights would be adding to their existing group of venues in the autumn, the latest addition to portfolio for the team behind the Three Eagles has now been revealed. Blk Sheep Baa & Grill, a brand-new restaurant concept from the group will aim to deliver a new generation of British casual-dining, serving delicious nostalgic contemporary British food and drinks that appeal to a broad catchment of diners, in fun and relaxed surroundings.
The exact location and opening date for this new venture led by One Hundred Knights Directors Matt Jones and Adam Gaunt-Evans is yet to be announced, but the pair are keen to establish their vision as momentum towards opening builds.
Adam Gaunt-Evans, One Hundred Knights Director of Restaurants & Bars said:
“Our philosophy for Blk Sheep Baa & Grill is based on delivering the best of home grown produce to our customers. British cooking, serving up value for money and eating pleasure around a table with loved ones will play an integral part in both the style of our cooking and our customer ethos.”
The Blk Sheep Baa & Grill will open daily to diners for brunch, lunch, dinner and drinks, all available from one simple all-day menu.
“Diners can expect to enjoy a nostalgic trip down memory lane, with a contemporary twist, as our all-day delivers British classics the whole family can enjoy,” says Adam.
Managing Director Matt Jones said:
“We have been fortunate enough to experience major success in the hospitality sector since the inception of Tyn Dwr Hall and the Three Eagles. We’ve taken many learnings and used the experiences we’ve had since 2016 to create the vision and direction for the Blk Sheep brand.
“Historically, both myself and Adam spent time abroad working away and only upon return did we develop a new found appreciation for the place we call home. The chance to re-connect with friends and family has been especially close to our hearts. Out of this nostalgic retrospect, the Blk Sheep idea was born. Strong roots, individual character and the urgency to be bold and brave. This is us personified.
“Our aim with the launch of this new brand is to become a leading casual dining operator in the North-West, with a high performing portfolio of multiple Baa & Grill sites,” concluded Matt.
Venue details and the opening date for Blk Sheep Baa & Grill will be revealed in the coming days. For more information, sign up to the Blk Sheep Baa & Grill newsletter via the website.

Three Eagles has been recognised as a 2021 Travellers’ Choice award winner for its number one Llangollen rated Bar & Grill. This achievement celebrates businesses that consistently deliver fantastic experiences to diners around the globe, having earned great traveller reviews on Tripadvisor over the last 12 months. As challenging as the past year was, Three Eagles stood out by continuously delighting visitors.
Adam Gaunt-Evans, Chef/Director at Three Eagles said: “We’re delighted to have been awarded a Travellers’ Choice Award for the second time at the Three Eagles. We have experienced a difficult 18 months throughout the pandemic and we were thrilled to once again open our doors to our loyal customers and the local community in the spring earlier this year. Since re-opening, we feel things have gone from strength to strength, with excellent on-going feedback from visitors.”
“Congratulations to all the winners of the 2021 Travellers’ Choice Awards,” said Kanika Soni, Chief Commercial Officer at Tripadvisor. “I know the past year has been extremely challenging for tourism businesses. What has impressed me is how businesses adapted to these challenges, implementing new cleanliness measures, adding social distancing guidelines, and utilising technology to prioritize guest safety. The Travellers’ Choice Awards highlight the places that are consistently excellent – delivering quality experiences time and time again even while navigating changing customer expectations and new ways of working. The National Pub & Bar Awards aims to put the finest on-trade businesses across the UK in the national spotlight, showcasing just how diverse and creative the hospitality industry really is, as well as how these inspirational operations have survived the pandemic. A total of 94 pubs and bars received the prestigious National Pub & Bar Award.
The venues, which have been selected on overall best practice across a number of operational categories, will be officially crowned at a red carpet celebration at 30 Euston Square on Monday 6 September. ]]>The Three Eagles are one of over 100 Welsh employers taking part in a week of online employer led activities for pupils in years 8, 9 and 10 linked to the Curriculum for Wales’ Areas of Learning and Experience (AoLE’s).
Organised by Careers Wales, the Career Discovery Week will bring real world of work experiences and information to young people across Wales to help them prepare for their future careers.
The week-long programme of live and pre-recorded activities, challenges, videos and vlogs will take place virtually between 5 and 9 July and aims to raise the career aspirations of young people; influence pupils career plans and subject choices; help pupils realise their career goals and introduce pupils to employers who can inspire, inform and motivate them. Pupils will also have the opportunity to ask questions in a live question and answer session.
Three Eagles Head Chef Dyfan Hughes is putting pupils through their paces on Tuesday, with a numeracy exercise. Participants will be tasked with a maths challenge to cost out a portion of our legendary JFC starter and then work out the selling price. Dyfan, who attended local Ysgol Dinas Bran Secondary School, trained as a chef in restaurants in North Wales and Chester.
Dyfan said: “I was excited to take part in the numeracy challenge as part of Career Discovery Week. I’m really passionate about living and working locally and proud to say I went to school over the river from the Three Eagles. We have some fantastic opportunities available here at the restaurant and we’re always looking for the next fresh talent. The kitchen is a really enjoyable place to work and I get to use lots of skills besides cooking on a daily basis. I would urge pupils to consider a career in hospitality as no two days are the same and I work with a fantastic team.”
Mark Owen, Careers Wales’ Head of Stakeholder Services, said: “Following on from the success of our first online careers events earlier this year, we wanted to continue to deliver virtual engagement with employers so that they can continue to provide valuable opportunities and information for young people in secondary schools.
“Engagement and interactions with employers can change the attitudes of pupils to education, influence their career plans and subject choices, motivate them to study harder and support an improvement in academic attainment.”
“It’s important that we continue to work with local businesses to provide opportunities for the next generation and Wales’ future workforce.”

]]>One Hundred Knights, the hospitality and leisure operator behind Llangollen based Three Eagles, Tyn Dwr Hall and The Royal Hotel, is on the lookout for recruits for their newly launched Hospitality & Kitchen Academy.
Launched in 2020 by Director of restaurants and bars, Adam Gaunt-Evans, the vision is to train and develop the next generation of chefs, front of house and hospitality professionals in the local region.
“I grew up in Llangollen and received a fantastic apprenticeship under mentor Dai Davies, supported by Coleg Cambria in Wrexham” explains Adam.
“Learning a trade was my ticket to a new exciting life and once I’d received my training, I was sent off to the bright lights of London, something I would never have been prepared for without a proper apprenticeship.”
“Being a chef has given me the opportunities to work in seven different countries and really see the world. Cooking is a fun, creative job you can get very passionate about.”
Adam and the management team behind One Hundred Knights are passionate about giving back to the industry and nurturing their own talent.
“Once you’ve learned your skills, the world’s literally your oyster – yet we are also creating dozens of really exciting new roles in our local area over the coming years with the addition of the Royal hotel and some very exciting restaurant projects, opportunities you would have to move away for a generation ago.”
Katie Ince, Operations Manager for One Hundred Knights and Restaurant Manager at the Three Eagles said;
“Hospitality isn’t all clearing plates and serving food, there is so much more. Not only do you get great customer interaction, or a real buzz from a busy shift, but the skills you can learn in this trade are phenomenal.
“From mixology to marketing, from HR to business management, from social media management to stock taking – the opportunities to learn are endless. The academy alongside Coleg Cambria can support our youngest recruits through these avenues, whilst providing the opportunity to work in a great environment surrounded by passionate people who will take you under their wings!”
Those interested in enquiring about joining the Hospitality or Kitchen Academy, or a position within the Three Eagles team can drop the team an email at [email protected] or visit our careers page for more information!
