This month, Kim Watson reveals her passion for seasonal ingredients and Mexican cooking.
What do you do at the Three Eagles Bar & Grill?
As well as being on the floor taking care of people, I look after the heart of the business, organising the team and making sure we are running as safely and smoothly as possible.
What do you love most about what you do?
The variety! I love meeting new people and talking about food and drink – they’re my favourite subjects.
What first attracted you to the hospitality industry?
I started as a part-timer aged 14, and fell in love with the flexibility and team work of the business. I’ve never worked anywhere else. It’s like being part of a family.
What’s your signature dish at home?
I make a lovely Chicken Tinga with home-made corn tortillas and salsa – all washed down with Margaritas.
